Day 2 of GTCO Food and Drink Festival Spotlights African Cuisine with Chef Tilly’s Masterclass on Healthy Eating
Lagos, Nigeria – The second day of the ongoing GTCO Food and Drink Festival 2025 opened on a rich and inspiring note with a standout masterclass by Chef Tilly Ramsay, who took attendees on a flavorful journey through the diverse world of African cuisine — with a modern, health-conscious twist.
Titled “African Flavours for a Healthier You,” the session drew a large crowd of food enthusiasts, culinary students, nutrition advocates, and families eager to explore how traditional African dishes can be both nutritious and delicious.
With an energetic and engaging presence, Chef Tilly demonstrated how time-honored ingredients and cooking techniques from across the continent could be adapted to suit modern dietary needs without compromising on taste. From millet and fonio to native vegetables, spices, and lean proteins, the class emphasized natural, locally-sourced ingredients and their health benefits.
Chef Tilly highlighted the importance of reviving African food culture in a way that promotes wellness. “African food is incredibly diverse, rich in nutrients, and steeped in heritage,” she noted. “We don’t need to sacrifice our identity to eat healthy. We just need to understand the ingredients better and learn how to prepare them in ways that support good health.”
The session featured live demonstrations of several reimagined African dishes—such as baked moi moi, oil-free egusi with steamed vegetables, grilled suya-spiced chicken with quinoa, and a detoxifying zobo and hibiscus smoothie—all of which were met with enthusiastic applause and interest from the audience.
Audience members not only tasted these innovative meals but also participated in a Q&A session, where Chef Tilly addressed common myths about African food and provided tips on how to adapt home cooking habits for better health outcomes.
“We’re inspired to try these recipes at home,” said one participant, a Lagos-based food blogger. “Chef Tilly’s class was not just about cooking, it was a reminder that African food can be part of the global wellness conversation.”
The GTCO Food and Drink Festival continues to position itself as more than just a food exhibition; it is a dynamic cultural and educational platform that bridges tradition and innovation. The event’s masterclasses, in particular, have become a powerful draw, offering access to world-class culinary talent and thought-provoking conversations around food, health, and lifestyle.
As the festival progresses, more exciting sessions, vendor showcases, and family-friendly activities are expected, further cementing its status as one of the most celebrated food events in West Africa.
